Fresh Summer Peach Crisp

5-6 cups fresh peeled and sliced ripe peaches
1 tablespoon fresh lemon juice
2 tablespoons all-purpose flour
½ teaspoon cinnamon
1/4 cup sugar
1/2 cup quick cooking oats
1/2 cup all-purpose flour
1/2 cup firmly packed brown sugar
1/3 cup  butter, softened

 Peel peaches and cut them in half, remove the pit, and cut into 1/2-inch wedges. Combine peaches, lemon juice, flour, cinnamon, and sugar. Mix oats, flour, brown sugar, and butter together until mixture resembles coarse crumbs. Place filling in an 8-inch square baking pan and sprinkle evenly with topping. Bake about 30 minutes, until topping is golden-brown, peaches are tender, and the crisp is bubbly around the edges. Serve warm or at room temperature. Serves 6 to 8.

Fresh Peach Salsa

2 cups peeled and chopped peaches
3/4 cup chopped red bell pepper
1/4 cup seeded, chopped cucumber
½ tsp red pepper flakes
1/4 cup diced red onion
2 tablespoons honey
2 tablespoons lime juice
1 tablespoon finely chopped cilantro
Salt to taste (optional)

Combine all ingredients. Cover and chill for several hours, stirring occasionally. Great with grilled meat or with tortilla chips. Yield: about 3 1/2 cups
