Grilled Ratatouille

Grilled Peach Sundae with Maple Butter Sauce

  1. Grill the peach on both sides until just soft
  2. Heat ¼ c butter and ½ c maple syrup in a small saucepan until boiling, stirring constantly.
  3. Once its boiling, stir rapidly for about 3 minutes until the sauce comes together and thickens.
  4. Keep the flame on just enough to keep the boiling going.
  5. Remove the skin of the peach and slice.
  6. Add the peach to a scoop of vanilla ice cream
  7. Top with warm sauce and pecans if wanted.

Peach Vinaigrette

⅓ cup white balsamic vinegar

2 Tbs. brown sugar

¼ teas. Black pepper

⅛ teaspoon salt

2 Tbs. olive oil

1 large peach

1 ½ Tbs. chopped basil

Combine all ingredients except peach, basil and brown sugar

You can either blend the peach in or cut up the fresh peach into small pieces depending on what kind of dressing you want. The blended dressing is thick and is also good on grilled pork chops.

Once the peach is added, stir in the chopped basil.

Taste. If it’s sweet enough for you, don’t add the brown sugar. If not, add to taste.
