Puerto Rican Chicken and Rice


For the Chicken 

1.5 lbs chicken

2 Tablespoon olive oil

Adobo seasoning for the chicken (mix all together)

1 teas. Ground  cumin

¾ teas. Paprika

½ teas. Chili powder or red chili flakes

½ teas. Cayenne pepper (optional)

¼ tes. Onion powder

½ teas. Garlic powder

¼ teas. Ground coriander

½ teas. Salt

Freshly ground pepper

For the Sofrito (or Recaito) if made just for recipe. If you made in bulk use ¾ cup.

3 cloves garlic

¼ cup green peppers 

¼ cup white onion

¼ cup cilantro with some culantro if you want

3 aji dulci peppers or ⅛ cup small red bell pepper 

2nd seasoning mix added with rice

¼ teas. Ground coriander

¼ teas. Ground cumin

¼ teas. Turmeric (or 1 oz. fresh turmeric)

¼ teas. Garlic powder

¼ teas. Oregano

¼ teas. Salt

¼ teas. Blk pepper

1 cup tomato sauce

1 ¼ cup water

1 cup long grain rice

⅔ cup pigeon peas or any kind of crowder peas

½ cup pitted green olives (optional)


  1. Mix together the seasoning mix for the chicken and marinate for 30 min. before cooking if you have time. If not just add it to the chicken as you brown it in the pan.
  2. Either use a small food processor to blend or finely dice the ingredients for the sofrito.
  3. Mix together the spices for the 2nd spice mixture for the rice.
  4. Wash your rice several times until the water runs clear.
  5. Heat 1 Tablespoon olive oil in a cast iron pan or good non-stick frying pan.
  6. When it is hot add the chicken and the adobo spices and cook for 4 minutes on both sides until browned and just about cooked through.
  7. Remove the chicken from the pan and place on plate
  8. Add the other Tablespoon of olive oil to the pan and the sofrito and cook 2- 3 minutes and then add the spice mixture for the rice and cook for another 30 sec. 
  9. Add the water, tomato sauce and ½ teas. salt or to taste and stir to combine. Bring to a simmer
  10. Fold in the  rice and peas making sure it’s evenly distributed.
  11. Place the chicken on top and immediately cover and cook for 20 -25 min. Until the rice is done. 
  12. Garnish with a squirt of lime juice, some salad and avocado.
